A simple yet delish meal for anytime.
Skillet
Olive Oil
Egg beaters
Spinach
Salt & Pepper
Cayenne
First, heat skillet in about a teaspoon of olive oil, then add chopped fresh spinach–about a cup. Let the spinach wilt a little then add seasonings to taste. Soon after, pour well shaken egg beaters/egg whites over spinach just enough to cover. Place lid on skillet if you have one; otherwise, lower the heat to medium and wiggle the skillet more often. What helps too is to spread the olive oil around before adding the spinach. Also, allow the skillet to heat for a couple of minutes before adding anything to it.
Once you see that most of the egg in center and surrounding areas is cooked, then carefully flip over and cook another few minutes.
Enjoy your meal with a side of whole grain toast or all by itself!
