Caffeyole Fast & Easy Shrimp Ceviche š¤

Hungry for something fresh thatās healthy and spicy? Well, ya came to the right place, my fellow earthlingšš½
What youāll need:
Bowl large enough to suit the amount youāre making.
I use a large Pyrex bowl.
1.5 lbs / ~ 0.70 kg Shrimp cooked chopped cold
*Lemon / Lime juice 1/2 cup-
I use whatever I have, fresh alwaysJalapeƱos finely diced-
I use two jalapeƱos or one serranoOnion diced small-
I use whatever I have in houseKosher salt to taste-
I taste the entire way throughCracked black pepper-
I use thirteen cracksSTIR
*Cucumber peeled, cored & diced small like onion-
I prefer the regular cucumber as they seem to last longer*Tomato diced fresh two-
I prefer the garden grown if available at marketCilantro fresh rough chop-
I use an entire bunch minus the stemsSTIR
Corn fresh 1/2 cup
Avocado chopped
Sweet vinegar 1 tablespoon
STIR
COVER
REFRIGERATE
You can serve and eat right away, but I like to refrigerate mine anywhere from 6 to 24 hours.
Serve alongside tostadas or tortilla chips your preference.
I also have a couple of bottles of Cholula and Tabasco set out for those of us who like it a little spicier and wedges of lemon / lime.I enjoy cold Sauvignon Blanc to pair with my ceviche.
An ice cold ale goes well too.
A fun mocktail works just as yummily. Youāll need:A pitcher to mix before serving as itās easier to pour.
Moisten glass edge-full circumference-with a sugar and salt mix. Youāll wanna scoop the ice in afterward but before you pour mocktail.
Citrus soda water
Fresh mint, cilantro, jalapeƱo chopped
Squirt soda
Red grenadine
Pour in pint glass with ice to top.*Core cucumber by slicing in half lengthwise and using a teaspoon to remove the seeds.
*I prefer fresh squeezed lemon juice. Sometimes I use 3/4 to 1 cup juice depending on how the flavor profile is coming along as I taste.
*I donāt remove seeds from tomatoes, I like them.
