Caffeyole Smashed Potato & Tuber Dish

Holiday cooking is super fun and look forward to it yearly.
I hope you too find joy making this dish for your family and friends. If you do, then you’ve come to the right place my fellow earthlings!*for the sake of this recipe I use the word ‘potatoes’ to include tubers and roots👌🏽.
Utensils you’ll need:
Large pot to boil potatoes filled with water up to 3/4s leaving enough space for potatoes
Colander
Large bowl to smash the potatoes when done
A potato smasher
Medium bowl to combine the sour cream mix
13 x 9 x 3 inch casserole baking dish
*might need an extra baking dish to accommodate excess potatoesIngredients:
2-3 lbs Red potatoes cut square into bite sized cubes
2 lbs Sweet potatoes cut square into bite sized cubes
1 lb Celeriac cut square into bite sized cubes
1 lb Turnips cut square into bite sized cubes
3 tsp pink salt from Costco (use what you have just be cautious if using small gradual salt)
1 c Kirkland Bacon bits
1.5 Tsp Dry Oregano
2 Tbsp Fresh rosemary finely chopped
1 c yellow onion diced small
*I use whatever I have in the house-Cracked black pepper to taste
2 c Sour cream —lite if you’d prefer
1 brick cream cheese softened
1.5 c Gruyère cheese grated
*put 1/2 cup aside to sprinkle over to before putting in oven1/2 c unsalted butter softened
*extra butter for buttering baking dish1 c milk warmed
*I use low fat Lactaid1/2 c Green onion diced
*for sprinkling over top once ready to serveBoil potatoes until fork tender approximately 30 minutes as there are a lot to boil.
NEXT
When potatoes are done/fork tender, drain
(Save a cup or so of the potato water. You can keep it all and make a soup with it later👌🏽)Smash potatoes but not too smooth; we want chunky potatoes hence smashed potatoes
*taste make sure potatoes are salted to your likingNext
In medium bowl add all dairy (except 1/2 cup of Gruyère) listed and nuke a few seconds so that it mixes easily with smashed potatoes.
Stir until ingredients are incorporatedNext Add
Herbs, spices, bacon bits, and white onion.
Mix in but keep from mashing potato mix too much. I use two large spoons👌🏽Next
Place potato mixture into a buttered baking dish and bake on middle rack for 30 minutes at 350°F
Then raise to top rack for additional 15 minutes.
*check make sure cheese is bubbly and browning.Before serving, sprinkle top with green onion and perhaps extra bacon bits.
Enjoy and eat up!

Caffeyole Iceberg Lettuce Salad
From time to time we end up with a head of iceberg lettuce and wonder what can be created with it other than the common uses.
These are the moments in my life that inspire new creations; here is my latest recipe:
April 14th, 2025 M [0901]
What you will need:
Large pretty glass bowl for salad
Small bowl for dressing
Tongs or Salad Tossers
Lettuce Spinner
Ingredients:
1 Head of Iceberg lettuce chopped into bite size pieces, wash and spin until no more liquid is released.
1 Cucumber peeled cored and chopped into bite size pieces
1 Carrot shredded
1 small can sliced Black Olives
1 cup Cherry tomatoes quartered
1/2 cup Bacon Bits
1/2 cup Stilton cheese crumbled
Pinch of Salt -to taste
17 cracks of Black pepper
Dressing Ingredients:
1/4 cup Mayonnaise
1/4 cup Plain yogurt
1/4 cup Dark Balsamic vinegar
Salt and Black Pepper to taste
Place dressing ingredients in small bowl and mix well until balsamic vinegar is blended in well. I use a spoon or fork. Set dressing aside.
When you are ready to serve salad, in the large bowl add all the vegetables and toss well. Then add half the dressing and toss salad for no less than one minute.
Add more dressing or all of it depending on how coated you want it. I put any leftover dressing in a ramekin and place on table.
Finish off the salad by sprinkling salt and pepper over the top. Viola!

🥓 Caffeyole Bacon Spinach Tofu Frittata 🥘

Hi!
Hungry for something fresh that’s healthy and a little spicy? Well, if you like eggs bacon and spinach, then you have came to the right place my fellow earthlings!
What you’ll need:
A skillet large enough to suit the amount you’re making-I prefer a 12” x 3” Teflon skillet as it’s easier to maneuver.
2 Tbsp Olive Oil-use whatever oil you have on hand
PREHEAT SKILLET and oil over medium high heat
1 Package Tofu (tofu usually comes in a square container filled with liquid) Cut square into 1/4ths, then slice each 1/4th into 4 slices, then place on paper towel to drain a bit while skillet heats up
1/2 cup Kirkland Bacon Bits
1.5 Tsp Dry Oregano
1/2 cup diced green or yellow onion diced small-
I use whatever I have in house
Kosher salt to taste-
I taste the entire way through
Cracked black pepper-
I use thirteen cracks
STIR and Cook for 5 minutes
NEXT Add
1/2 cup Salsa-your favorite I use Pace or whatever is in the house
10 Cherry Tomatoes whole
6 Eggs slightly beaten with a bit of milk and a pinch of salt and pepper
Stir until ingredients are incorporated into the egg
Next Add
2 cups Spinach Fresh chopped
COVER
LET COOK over medium heat for about ten minutes
DIRECTIONS
First sear tofu on both sides. This part takes about 20 minutes to get a really good sear.
Thereafter, add the next five ingredients.
Cook for about five minutes then add next three ingredients, mix in egg, then at spinach, cover, cook over medium heat for 10 minutes. Thereafter, slice frittata in half then into quarters, flip and cover and cook for another five to ten minutes. Remove lid, check frittata from bottom side to make sure egg has cooked through.

What you’ll need:
Bowl large enough to suit the amount you’re making.
I use a large Pyrex bowl.
1.5 lbs / ~ 0.70 kg Shrimp cooked chopped cold
*Lemon / Lime juice 1/2 cup-
I use whatever I have, fresh alwaysJalapeños finely diced-
I use two jalapeños or one serranoOnion diced small-
I use whatever I have in houseKosher salt to taste-
I taste the entire way throughCracked black pepper-
I use thirteen cracksSTIR
*Cucumber peeled, cored & diced small like onion-
I prefer the regular cucumber as they seem to last longer*Tomato diced fresh two-
I prefer the garden grown if available at marketCilantro fresh rough chop-
I use an entire bunch minus the stemsSTIR
Corn fresh 1/2 cup
Avocado chopped
Sweet vinegar 1 tablespoon
STIR
COVER
REFRIGERATE
You can serve and eat right away, but I like to refrigerate mine anywhere from 6 to 24 hours.
Serve alongside tostadas or tortilla chips your preference.
I also have a couple of bottles of Cholula and Tabasco set out for those of us who like it a little spicier and wedges of lemon / lime.I enjoy cold Sauvignon Blanc to pair with my ceviche.
An ice cold ale goes well too.
A fun mocktail works just as yummily. You’ll need:A pitcher to mix before serving as it’s easier to pour.
Moisten glass edge-full circumference-with a sugar and salt mix. You’ll wanna scoop the ice in afterward but before you pour mocktail.
Citrus soda water
Fresh mint, cilantro, jalapeño chopped
Squirt soda
Red grenadine
Pour in pint glass with ice to top.*Core cucumber by slicing in half lengthwise and using a teaspoon to remove the seeds.
*I prefer fresh squeezed lemon juice. Sometimes I use 3/4 to 1 cup juice depending on how the flavor profile is coming along as I taste.
*I don’t remove seeds from tomatoes, I like them.
