Caffeyole Smashed Potato & Tuber Dish

Holiday cooking is super fun and look forward to it yearly.
I hope you too find joy making this dish for your family and friends. If you do, then you’ve come to the right place my fellow earthlings!*for the sake of this recipe I use the word ‘potatoes’ to include tubers and roots👌🏽.
Utensils you’ll need:
Large pot to boil potatoes filled with water up to 3/4s leaving enough space for potatoes
Colander
Large bowl to smash the potatoes when done
A potato smasher
Medium bowl to combine the sour cream mix
13 x 9 x 3 inch casserole baking dish
*might need an extra baking dish to accommodate excess potatoesIngredients:
2-3 lbs Red potatoes cut square into bite sized cubes
2 lbs Sweet potatoes cut square into bite sized cubes
1 lb Celeriac cut square into bite sized cubes
1 lb Turnips cut square into bite sized cubes
3 tsp pink salt from Costco (use what you have just be cautious if using small gradual salt)
1 c Kirkland Bacon bits
1.5 Tsp Dry Oregano
2 Tbsp Fresh rosemary finely chopped
1 c yellow onion diced small
*I use whatever I have in the house-Cracked black pepper to taste
2 c Sour cream —lite if you’d prefer
1 brick cream cheese softened
1.5 c Gruyère cheese grated
*put 1/2 cup aside to sprinkle over to before putting in oven1/2 c unsalted butter softened
*extra butter for buttering baking dish1 c milk warmed
*I use low fat Lactaid1/2 c Green onion diced
*for sprinkling over top once ready to serveBoil potatoes until fork tender approximately 30 minutes as there are a lot to boil.
NEXT
When potatoes are done/fork tender, drain
(Save a cup or so of the potato water. You can keep it all and make a soup with it later👌🏽)Smash potatoes but not too smooth; we want chunky potatoes hence smashed potatoes
*taste make sure potatoes are salted to your likingNext
In medium bowl add all dairy (except 1/2 cup of Gruyère) listed and nuke a few seconds so that it mixes easily with smashed potatoes.
Stir until ingredients are incorporatedNext Add
Herbs, spices, bacon bits, and white onion.
Mix in but keep from mashing potato mix too much. I use two large spoons👌🏽Next
Place potato mixture into a buttered baking dish and bake on middle rack for 30 minutes at 350°F
Then raise to top rack for additional 15 minutes.
*check make sure cheese is bubbly and browning.Before serving, sprinkle top with green onion and perhaps extra bacon bits.
